Squash Mashed Potatoes – How to Cook
• Heat your oven to 180c.
• Cut off both ends of the squash before cutting it in half.
• Remove the seeds and any pulp from the centre of the squash.
• Brush oil on the squash and season with salt and pepper.
• Place face down on the pan and roast for around 45 minutes or until you can pierce with a fork.
• Scoop out the flesh into a bowl, add butter and mash.
