Thyme English Winter (Thymus vulgaris) is a hardy, evergreen perennial herb with small, aromatic grey-green leaves and a robust, earthy flavour. Perfect for seasoning meats, vegetables, soups, and stews, it retains its flavour well even when dried. This low-growing, woody herb is hardy enough to withstand cold winters and is a good addition to herb gardens or containers.

Growing Instructions

  1. Sow indoors between February-April on seed compost.
  2. Lightly cover and keep at a temperature of 15-20c.
  3. Germination will occur in 15-30 days.
  4. When large enough to handle, transplant into 8cm pots.
  5. Gradually aclimatise outdoors and plant out after the risk of frost has passed.
  6. Harvest the leaves throughout the summer by cutting small sprigs.
  7. To dry, cut the stems just as the flowers start to open and hang in small bunches.
  8. Harvest sparingly the first year.
